Ουσίες που προστίθενται εκούσια σε τρόφμα ώστε να επιτύχουν ορισμένες τεχνολογικές λειτουργίες, για παράδειγμα τον χρωματισμό, τη γλύκανση ή τη διατήρηση των τροφίμων. Στην Ευρωπαϊκή Ένωση όλα τα πρόσθετα τροφίμων ταυτοποιούνται με αριθμό Ε. Τα πλέον κοινά πρόσθετα που εμφανίζονται σε ετικέτες τροφίμων είναι τα αντιοξειδωτικά (για την πρόληψη της βλάβης που προκαλείται από την οξείδωση), οι χρωστικές, οι γαλακτωματοποιητές, οι σταθεροποιητές, οι παράγοντες ζελατινοποίησης και οι πυκνωτικές ουσίες, τα συντηρητικά και τα γλυκαντικά.
