  • Sostanze aggiunte intenzionalmente ai prodotti alimentari per svolgere determinate funzioni tecnologiche, per esempio per colorare, addolcire o favorire la conservazione degli alimenti. Nell'Unione europea tutti gli additivi alimentari sono identificati da un numero preceduto dalla lettera E. Gli additivi più comuni che compaiono sulle etichette dei prodotti alimentari sono antiossidanti (per impedire il deterioramento provocato dall'ossidazione), coloranti, emulsionanti, stabilizzanti, gelificanti e addensanti, conservanti e dolcificanti.
